So it's always a good idea to check it regularly, with a food thermometer, preferably.īut in general, when cooking fillets, at 425☏, salmon will be done in 7-9 minutes, and if you want to cook it a little slower, at 350☏, salmon will be done in 15-20 minutes. Regardless of the temperature you use, you should never just put fish in the oven, set a timer, and then walk away oven temperatures can vary widely, and the thickness of the fish (plus whether it's coming straight from the fridge, or has been fully defrosted) will all make a big difference. So if you're trying to get dinner cooked faster, you may want to use a higher temperature, but if you're consistently overcooking your fish, then lowering the temperature will give you more of a cushion in terms of checking on the fish and making sure it isn't overcooked. 4 skinless salmon fillets, (6 ounces each) 1 1/4 teaspoons coarse salt Freshly ground pepper 1 small shallot, finely chopped 2 tablespoons capers, drained. Serve with the Toasted Almond Parsley Salad and squash, if desired. Bake until salmon is cooked through, about 12 to 15 minutes. Depending on your cut and recipe, the salmon can cook differently. Place salmon, skin side down, on a non-stick baking sheet or in a non-stick pan with an oven -proof handle. When baking salmon, the higher your oven's temperature is set, the faster the salmon fillets will cook. Overcooking your salmon is the most common mistake made when cooking salmon in the oven. SHOP NOW What's The Best Temperature to Bake Salmon? It can be cut easily with the side of a fork, and doesn't flake or fall apart as easily. It's overcooked! However, at 120☏ to 125☏, salmon is much more moist and tasty. You may notice white goopy stuff (albumin) coming out of the fish, and pooling either on the plate or on the fish itself. If you've ever cooked fish to 145☏, you've probably noticed that it tastes dry, rubbery, perhaps a little bit chalky. Why 125☏ Is a Much Better Temperature to Cook Salmon Then, wrap up the salmon and seal the foil packet shut. Sprinkle on some lemon juice, extra-virgin olive oil or butter, garlic, along with some of your favorite aromatics like dill or fennel. You don’t want it to reach above 140F (60C), though, because it will. Between 125F and 140F, it’s medium to well-done. ![]() At 110F to 125F (43C to 52C ), the fish is medium-rare. If the temperature is below 110F (43C), the salmon is essentially raw. So, while 145☏ may kill listeria bacteria immediately, if salmon is cooked to a slightly lower temperature, it should still be safe to eat, as it will not immediately return to the lower temperature. How do you not overcook salmon Just use a baking sheet and some tin foil Place your salmon in the center of the sheet of foil. Verify the temperature is at least 110F (43C) but below 140F (60C). Kenji Lopez-Alt notes in his food-and-science book, Food Lab, "there isn't a simple temperature limit that defines when chicken are safe to consume: rather's it's a combination of temperature and time." The USDA arrived at this number because the main microorganism that causes food borne illness in seafood and fish is Listeria, and 145☏ is hot enough to more or less kill the bacteria instantly. Get the recipe: Miso Marinated Salmon Why Some People Say Salmon Must Be Cooked to 145☏ġ45☏ is the temperature recommended by the United States Department of Agriculture (USDA), which sets the food safety regulations, here in the States.

If the neg is not so good, then the scanner can't do any better than that. If the neg is top notch, even Vuescan will produce a very good scan from it. For a start, the scanner is only as good as the negative being scanned. ![]() If other folk post pics that are sharper and have better color than your pics, they either have better equipment and/or better knowledge of the software they're using, or you are simply not post processing your pics to their standard. There's usually good reports about the Canon 9000f (I take it you meant "9000" not "900"), but determine if that is the scanner you want to continue with before buying Silverfast which will be locked into your scanner, and then have to change it for any future scanner you acquire. But now you say you want to print 13x19, well that's a different matter altogether, Silverfast would be worthwhile in that case, but there's still a learning curve with it and also with Vuescan. I'm basically self and youtube taught, but if there's a good learning solution, or a needed equipment upgrade, I'm all for any ideas anyone has.Ĭlick to expand. No, Silverfast has a reasonable reputationīut for posting pics online, it's not really necessary to buy Silverfast which is a major cost. I've learned a lot over the past couple of years, but I feel I've hit a roadblock in terms of learning curve. Would pricier consumer-grade scanner really make that much of a difference? Or is it possible my Lightroom/Photoshop skills are that below par? Is there a scanner below the V800 price range that would be worth upgrading to? Or is the general consensus that Flatbeds are no longer the way to go? I am constantly on Instagram and various online publications and see other 35mm images with sharpness and color ranges much better and deeper than I've ever achieved. I think now that I'm doing mostly color 35mm film instead of black and white, Epson would have been the better brand choice. Maybe it couldn't hurt to have both? VueScan definitely has a lot of strengths, and I've gotten lots of nice images out of it, its just not consistent especially with color accuracy and range.Īs for my scanner, I'm reasonably happy with the resolution of many of my scans, but reading online there's a lot of debate over the actual resolution of these scanners. The time spent getting a decent looking image from which I can more easily pick my best frames and do any detail editing is a fraction of the time. I'm well aware of the cost of Silverfast vs Vuescan, as well as the company's reputation as not so consumer friendly (charging for upgrades and registering for new scanners) but I'm still thinking about making the switch. VueScan also constantly clips the blacks, and I find the interface so spartan I don't feel I have much control over what I'm doing. Either way the amount of post just to get the image to a basically satisfactory level is crazy time consuming. VueScan rarely hits the color even nearly correct, and I've resorted to either scanning the negatives in raw and manually turning each image into a positive then color correcting in Photoshop, or, if the color is at least in the ballpark for a roll, flattening the image out as much as possible in VueScan. I've been using a Canon 900f MKII with VueScan Pro for a while now, and while I've been reasonably happy with the results I recently tried a trial version of Silverfast SE 8 and was amazed at the differences right out of the scanner. ![]()
![]() We knew it was time to rethink and retool. Even the system we built to correlate events across the entire infrastructure (code-named “focus”) was creaking under the weight of so many new services. Soon, no single person could tell you how Salesforce was working because we now had a disparate monitoring infrastructure. As our infrastructure and products expanded, our engineers were expected to respond to new alerts, in huge volumes, often for services they’d never seen before. This was a great solution at the time - as Salesforce architect Bala Subramanian would say, it wasn’t too big. Monitoring was mainly a list of Nagios alerts that Site Reliability engineers watched to quickly resolve problems. Monitoring was relatively easy as everyone worked on the same product, and when something went amiss, there was plenty of “tribal knowledge” about how to fix it. In the beginning, our entire service revolved around one single CRM application. To understand why we built Refocus, you have to take a step back and look at the history of system monitoring at Salesforce. We use it at Salesforce, and we’re releasing it as open source so you can use it, too. In this post, we’re excited to share Refocus, a new tool we’ve created, that helps our Site Reliability Engineers do just that. Keeping all of that humming along, while serving billions of transactions every day, is no small feat. We have hundreds of software stacks, running in data centers all over the world, serving mission-critical applications for the world’s most successful companies. And, as your systems grow in size and complexity, this quickly goes from “challenging” to “downright impossible” if you don’t have the right tools at hand.Īt Salesforce, this is something we think about a lot. If you can’t see what’s going on with your systems, at a glance, it’s next to impossible to run systems with high availability. 最新版本是 Super Refocus for Mac 的 1.5.At least, it is if you’re a company that runs 24×7 production infrastructure.
